Cake
I have officially got the baking bug & cannot stop producing delicious cakes & pastries, the source of the bug is friend Lu who has inaugurated me into the delights of The Cake Committee. The Cake Committee is group of wanna be bakers who gather every couple of months for a tea party to show off their baking skills & sell their hand crafted wonders, all in the aid of charity, brilliant, click above to see the blog.
In the past week I have created a Macha green tea, white chocolate & cardamom cake, a sensational egg free chocolate & raspberry cake and just yesterday a batch of whole meal mince pies with calvados & cinnamon liqueur. Check here soon for recipes & images.
All cakes are washed down with the finest tea in the land, provided by the wonderful people at Postcard Teas. If you get a chance drop by the shop or check the website & try some of their exquisite teas, I am currently hooked on the 2009 Da Hong Pao Oolong, it has an etherial complexity that has been transporting me to the most magical of places, delicious.
Here are the quite brilliant Tea House mixes produced by H.C.Earwicker, they have been produced to drink tea too, why not try some homemade cake with it, have a wonderful week x

New Moon
It's a new moon, the nights get longer, colder, damper, you reach for those old jumpers and warm comforting pots of deliciousness. Here is a little herbal infusion recipe to comfort you through the winter months, go visit your local herbalist or health food shop pick up a bag full of St Johns Wort, Rose Heads & Lemon Balm, add equal measures of all into a tea pot, pour on near boiling water, infuse for 5 mins or so, add a dash of honey and if you really want to bliss out a few drops of Aswagandha tincture, kick back, light a fire, take a bath, grow a beard, cuddle your loved one......bliss out.

Damiana
My Herbalist introduced me to the delights of the Damiana herb, it's a calming aphrodisiac, absolutely delicious when prepared with chamomile, fresh lavender flowers, honey & hot water. Take a stroll to your nearest herbalist discuss the benefits & take some home, for further info click here.
Also I made possibly one of the finest desserts ever on the weekend, here is the recipe along with some audio treats, have a wonderful week xx
Figs PX
Melt a small amount of organic butter in a pan along with a healthy dram of Pedro Ximenez Sherry, a table spoon of honey (Tanzanian Leatherwood is ideal), a splash of orange blossom water, a zest of 1/2 an orange cut into fine strips and a dash of fresh lemon juice.
On a roasting tray place some (6) figs, make two incisions diagonally into the tops of the fig & push gently to open. Inside the fig place broken freshly cracked walnut pieces & drizzle the mixture from the pan over the top, place in a pre heated oven gas mark 6, for 15 mins. Remove turn oven off, baste figs in juices on tray, add a sprig of fresh thyme on each fig & return to oven for 10mins.
Remove & serve with drizzled juices & small amount of mascarpone, delicious.

Just returned from the Bahamas, working on a little bar project called Bullion at the Colonial Hilton Nassau, if you are in Nassau please check it out for the finest drinks & service anywhere on the island.
